Essential Ingredients for Alaskan Chicken & Dumpling Soup

  • 2 Cups Flour
  • 2 tsp Baking Powder
  • 1 tsp Salt
  • 1/2 Cup Parmesan Cheese
  • 1 Cup Water
  • 1 Tbsp Olive Oil
  • 1/2 Cup Carrots – Diced
  • 1/2 Cup Onions – Diced
  • 1/2 Cup Celery – Diced
  • 1 Bay Leaf
  • 2 Garlic Cloves – Minced
  • 2 tsp Black Pepper
  • 1 tsp Red Pepper Flakes (optional)
  • 3 Chicken Breasts – Cooked & Shredded
  • 2 Cups Chicken Stock
  • 1 1/2 Cups Half & Half
  • 1/2 Cup Peas
  • 1 Tbsp Cornstarch (mixed with 1 Tbsp cold water)

Instructions:

  1. In a large bowl, combine the flour, baking powder, salt, and parmesan cheese.
  2. Gradually add 1 cup of water, mixing until the consistency resembles thick pancake batter that falls off the spoon in clumps. Set aside.
  3. In a heavy cast iron pan, such as a 10” Deep Skillet, heat the olive oil over medium heat.
  4. Once hot, add the diced carrots and sauté for 1 minute. Then, add the diced celery and sauté for another minute. Next, add the diced onions and sauté for 2 minutes. Finally, add the minced garlic, bay leaf, black pepper, and optional red pepper flakes, sautéing for an additional 2 minutes.
  5. Add the cooked, shredded chicken and mix until well combined.
  6. Increase the heat to medium-high, then pour in the chicken stock and half & half, bringing the mixture to a simmer.
  7. Once simmering, drop tablespoon-sized dough balls evenly across the surface of the pot, avoiding direct overlap to prevent clumping.
  8. Allow the soup to simmer for 5 minutes without stirring to let the dumplings set. Gently stir to loosen the dumplings and coat them with broth.
  9. Continue to simmer for an additional 10 minutes, stirring every few minutes.
  10. If a thicker soup is desired, mix 1 tablespoon of cornstarch with 1 tablespoon of cold water and add it to the pot. Simmer for a few more minutes.
  11. Ladle the soup into bowls, garnish with fresh parsley, and enjoy!
