Never discard the neck when processing deer meat! This cut of venison is a favorite among many hunters and serves as a perfect camp meal when a crock pot is available. It can also be prepared using a cooking bag if an oven is the only option. Both methods require slow cooking to achieve tender meat, reminiscent of a traditional pot roast. With the right ingredients, the flavor of venison can closely resemble that of beef.
This dish can be served as a complete meal with just dinner rolls or a side salad. It is high in nutrition, low in fat, and moderate in calories.
The preparation for this meal can be completed in under fifteen minutes, but it needs to cook for six to eight hours, or until the meat easily falls off the bone.
This venison neck roast comes from a doe harvested at Chattokee Lodge in Northeast Alabama during a late-season deer hunt aimed at assessing herd management practices.
Ingredients for Venison Neck Roast in a Crock Pot
This recipe fills a 7-quart crock pot. Other vegetables and ingredients can be included or substituted based on personal preferences. The soups used in the recipe provide all the necessary spices, aside from pepper.
Serves 6-10
- 5-7 pound venison neck roast
- 2 cans of whole or new potatoes (canned potatoes are recommended as they retain their shape)
- 2 medium-sized onions, quartered
- 10 celery stalks, cut into one-inch pieces
- 2 cans of diced tomatoes
- 1 can of mushrooms (any cut)
- 1 can of cream of celery soup
- 1 can of cream of mushroom soup
- 1 package of onion soup mix
- 1 1/2 tablespoons pepper
- 1 cup of water
Preparation
The neck roast can be used straight from the freezer without brining or tenderizing.
Place the roast in the crock pot and add all ingredients, including the liquid from the potatoes. After adding the last cup of water, stir the ingredients together with a spatula.
Set the crock pot to high. Once the contents reach a full boil, reduce the temperature to medium or low until the meat falls off the bone.
Serve with dinner rolls or an optional side salad.
