Stuffed Moose Heart
Ingredients
- 1 cleaned moose heart (arteries removed)
- 3 slices of fire-dried bread
- 1 large onion
- 2 cloves of fresh garlic
- Salt and pepper (red pepper recommended)
- 1 bottle of beer (non-alcoholic is acceptable)
Directions
Break the bread into small pieces and mix with chopped onion, garlic, salt, and pepper. Stuff this mixture into the heart as you would with a chicken. Place the stuffed heart in a pot just large enough to accommodate it. Pour the beer into the pot, cover it, and place it in a preheated oven at 350°F (175°C) or over medium heat on a BBQ. Cook for 30-40 minutes until the liquid is absorbed. Allow it to rest for 5 minutes before slicing crosswise. This dish is a favorite in hunting camps, often surprising those who try it for the first time with its incredible texture and flavor.
