Stuffed Moose Heart

Ingredients

  • 1 cleaned moose heart (arteries removed)
  • 3 slices of fire-dried bread
  • 1 large onion
  • 2 cloves of fresh garlic
  • Salt and pepper (red pepper recommended)
  • 1 bottle of beer (non-alcoholic is acceptable)

Directions

Break the bread into small pieces and mix with chopped onion, garlic, salt, and pepper. Stuff this mixture into the heart as you would with a chicken. Place the stuffed heart in a pot just large enough to accommodate it. Pour the beer into the pot, cover it, and place it in a preheated oven at 350°F (175°C) or over medium heat on a BBQ. Cook for 30-40 minutes until the liquid is absorbed. Allow it to rest for 5 minutes before slicing crosswise. This dish is a favorite in hunting camps, often surprising those who try it for the first time with its incredible texture and flavor.

Moose, Barley, and Vegetable Soup

Ingredients

  • 1 pound of ground moose
  • 1 cup of soup mix
  • 1 large onion
  • 4 carrots
  • 2 stalks of celery
  • 6 medium mushrooms
  • 1 tablespoon of Worcestershire sauce
  • 1 beef bouillon cube or packet
  • Garlic salt and pepper to taste
  • 2 tablespoons of olive oil

Directions

  • Bring 2 quarts of water to a boil.
  • Add the soup mix and let it simmer for about 15 minutes.
  • Add the chopped onion and wait 10 minutes.
  • Add the chopped carrots, celery, and mushrooms.
  • Incorporate the beef bouillon and Worcestershire sauce.
  • Reduce heat to low and cook slowly until all ingredients are tender.
  • Brown the ground moose in olive oil and add it to the soup halfway through cooking.
  • Serve and enjoy.

Moose Steak Marinade

Ingredients

  • 1 cup olive oil
  • 1 cup brown sugar
  • 1 cup soy sauce
  • 1 small minced onion
  • 1 bulb of minced garlic
  • 1 teaspoon salt
  • 1 teaspoon white pepper

Directions

Mix all ingredients thoroughly. Add moose or elk steak to the marinade and refrigerate for 3 days to 2 weeks, stirring occasionally. Grill or cook to your preference. This marinade enhances the flavor, making it a preferred choice over beef.
